- 1 large yellow onion
- 3 large carrots
- 1 bunch of celery
- 907g package of pearl barley
- 2 x 900ml cartons of chicken broth
- 1.36L can of tomato juice
- 40g package of dried thyme
- 1 bunch of fresh parsley
- a recipe sheet to follow along and keep for future use!
Add leftover chicken or turkey for an extra hearty soup!
Also needed but not included: olive oil, salt, pepper, 1-2 bay leaves
